Mango Matcha Nicecream Bowl

There is just something so satisfying about a bowl of nice cream on a summer day.

There is also something so satisfying about food that looks just as good as it tastes. I mean, who doesn’t love an Instagram-ready nicecream bowl!? Maybe that’s just me…? Either way, you’ll want to whip up this bowl asap, trust me.

Mango Match Nicecream Bowl Ingredients

How does one whip up this dreamy bowl? It’s easier than you might think! All you need is five minutes, four ingredients, and a food processor or high-speed blender.

I find that a food processor does the best job of making the perfect ultra-thick texture since it doesn’t require a lot of liquid to blend. However, a good blender should still do the trick. I’ve made this in my Ninja bullet blender and it totally works. It just takes a little extra liquid to get it going…no biggie!

Whichever method you choose, simply throw in all of the ingredients and blend until smooth, adding small splashes of liquid as needed to keep it blending.

The end result is a healthier version of soft serve ice cream that is thick, creamy & super refreshing. Best of all, it’s packed with nutrients. The frozen bananas make a nice creamy base, and are also high in vitamin B6 and potassium.  Mangoes add sweet tropical deliciousness, and are packed with vitamin C and vitamin  A. Last but certainly not least, matcha adds an earthy green tea flavour that goes perfectly with the mangoes.  It’s a mighty little ingredient too, as matcha is rich in antioxidants and high in vitamin K.

Now for the final touch…toppings! If you’re feeling extra fancy and creative, now is your time to shine. I topped mine with peaches, strawberries, bananas, oats and chia seeds, but the possibilities are truly endless. Blueberries, pomegranate, coconut, flax seeds, hemp hearts or granola would all be delicious additions. And of course, you can forgo the picture-perfect toppings and eat it plain if you’re in a crunch for time (don’t worry, it’s just as delicious!).Mango Matcha Nicecream Bowl

This 5-minute nicecream bowl would make the perfect breakfast for those rushed mornings before work/school, or for a lazy Sunday morning when you want to pretend you’re on a tropical vacation.  Although, I fully support you eating this bowl any time of day if you’re feeling it. Dessert? Perfect. Dinner? Yes please. Right this second? Go for it!

MANGO MATCHA NICECREAM BOWL

This 5-minute nicecream bowl is thick, creamy, and super refreshing! Mangoes, bananas and matcha make a delicious base for all of your favourite toppings. Enjoy!

Servings 1 bowl

Ingredients

  • 1 1/4 cup frozen mango
  • 1 frozen banana (cut into thirds and frozen ahead of time)
  • 1 tsp matcha
  • 1/8 cup non-dairy milk or water (plus more as needed)

Method

  1. Add all ingredients to a high-speed blender or food processor.

  2. Blend, scraping down the sides with a rubber spatula as needed, until the ingredients are thoroughly mixed, and the consistency is thick like soft-serve ice cream.  If the mixture is too thick to blend, add more liquid in small splashes just until it starts to blend.

  3. Top with whatever toppings your heart desires! suggestions: strawberries, peaches, blueberries, mango, pomegranate, bananas, granola, coconut, chia seeds, hemp hearts, flax seeds, oats, almond butter, etc.

I’m sure most of you can agree that lockdown has been really tough. Here in Melbourne, it just seems to be dragging on and on. Lately, I’ve reallyyy been lacking motivation and creativity when it comes to cooking and making recipes (anyone else!?) and most days just getting out of bed is an accomplishment. 

But today was a good reminder for me that something as simple as getting outside and wandering around a new suburb, catching up with a friend, or treating yourself to a warm drink can change your outlook.

So this is just a friendly reminder to be kind to yourself, and try to do one simple thing that will brighten your day. Whatever that means for you. 😌✨

Can you believe that is NOT meat!? 🤯 I finally Can you believe that is NOT meat!? 🤯 I finally tried cooking with jackfruit and it did not disappoint !! I used caned jackfruit (in brine - not syrup) and simmered it in soy sauce, apple cider vinegar, garlic, ginger + brown sugar, and then baked it to get that meaty texture juuust right. It was SO good in this Vietnamese inspired rice noodle bowl with baked tofu, cabbage, carrot, cucumber, mint and peanut sauce 🤤 If anyone has any jackfruit tips or favourite recipes please share, I’d love to experiment with it some more! x
