Hey! I’m Alyssa, the 23-year-old foodie behind Plantiful Eating.

I’m on a mission to show the world that plant-based eating can be simple, delicious, and something that everyone can enjoy!

You can find me eating natural peanut butter straight from the jar, baking banana bread, travelling the world, trying new restaurants, and of course, taking pictures of my food. Oh, and eating cookies (in case that wasn’t obvious from the photos) because life’s all about balance!

MY PLANT-BASED JOURNEY

I grew up eating a pretty standard, and for the most part, balanced diet. It included meat, seafood, dairy, eggs (and maybe a few too many processed foods and frozen meals…oops). If you had told me that one day I would go vegan, I definitely wouldn’t have believed you. In fact, I probably would have said “ARE YOU NUTS!? I could never give up meat!”. Fast forward to my first year of university. I became interested in healthy eating and in taking better care of my body. The cafeteria salad bar quickly became my best friend, but I wasn’t shying away from steak or ice cream either. That all changed when one day while browsing Netflix I randomly decided to click on a documentary called ‘Vegucated’. It opened my eyes to a compassionate way of eating and I immediately started researching the many health benefits of plant-based eating.  I discovered blogs like Minimalist Baker and Deliciously Ella that became HUGE inspirations for me while transitioning to a plant-based diet (and still are to this day!).

Now here I am five years later…still plant-powered, and still LOVING IT!!

THE STORY OF PLANTIFUL EATING

My change in diet sparked a love of whole foods (give me allllll the veggies), and getting creative in the kitchen. The results of my creativity aren’t always a success…but don’t worry, I only share the good stuff on here!  Since I take pictures of absolutely everything I eat, I started a food instagram back in 2015.  The poor thing went through some long periods of neglect, and quite a few name changes, but finally @plantifuleating was born.  A few years (and many recipe requests) later, I finally created Plantiful Eating the blog! I am beyond excited to continue sharing my recipes and my love of plant(iful)-based eating with you!

Oh hey, it’s been a while...but I’m back...and Oh hey, it’s been a while...but I’m back...and I’ve brought COOKIES !!! And not just any cookies. We’re talking COOKIES N’ CREAM CHOCOLATE CHIP COOKIES aka my signature cookies. Friend had a bad day? I’m bringing these cookies. Rainy afternoon? I’m baking these cookies. And I’ve finally put the recipe up on the blog (link in bio) so you can now make them too !! They’re chewy and perfectly crisp around the edges. Think chocolate chip cookie perfection with the added bonus of oreos for that cookies n’ cream taste 🍪🥛 TIP: add a scoop of your favourite dairy-free vanilla ice cream in between two of these and you have the most decadent ice cream sandwich 🤩 Enjoy!! x

I’m sure most of you can agree that lockdown has been really tough. Here in Melbourne, it just seems to be dragging on and on. Lately, I’ve reallyyy been lacking motivation and creativity when it comes to cooking and making recipes (anyone else!?) and most days just getting out of bed is an accomplishment. 

But today was a good reminder for me that something as simple as getting outside and wandering around a new suburb, catching up with a friend, or treating yourself to a warm drink can change your outlook.

So this is just a friendly reminder to be kind to yourself, and try to do one simple thing that will brighten your day. Whatever that means for you. 😌✨

NEW RECIPE! STICKY MAPLE SOY TOFU // A plant-based NEW RECIPE! STICKY MAPLE SOY TOFU // A plant-based take on honey soy chicken (and my favourite thing to make for dinner these days!). This crispy baked tofu in a sticky maple soy sauce is free of both honey and chicken, but definitely not lacking in flavour! Try it out for yourself and let me know what you think. Ooey, gooey, melty toasties are where it’s at !! Ooey, gooey, melty toasties are where it’s at !! This one has @buteislandfoods cheddar sheese slices + feta, roasted pumpkin, avocado, rocket and pesto on super seedy whole grain bread 🤩 What else should I add in next time? #plantifuleating
Can you believe that is NOT meat!? 🤯 I finally Can you believe that is NOT meat!? 🤯 I finally tried cooking with jackfruit and it did not disappoint !! I used caned jackfruit (in brine - not syrup) and simmered it in soy sauce, apple cider vinegar, garlic, ginger + brown sugar, and then baked it to get that meaty texture juuust right. It was SO good in this Vietnamese inspired rice noodle bowl with baked tofu, cabbage, carrot, cucumber, mint and peanut sauce 🤤 If anyone has any jackfruit tips or favourite recipes please share, I’d love to experiment with it some more! x
